When to use stepper vs. servo motor?

Stepper motors are commonly recommended for applications that are cost-sensitive and low maintenance. Steppers provide stability and flexibility; they do not fluctuate in positioning, especially under dynamic loads, and can run in open or closed circuit configurations. If executed within its specifications, no encoders are needed.

Servomotors are recommended for high speed (typically more than 2,000 RPM) and hightorque applications that require dynamic changes of load. Servo Motors require more maintenance and a more complex configuration, but do not create vibration and / or resonance problems, such as Stepper Motors.
